Savoury Baked French Toast

Use your collection of bread heels and or stale bread for this savory compliment to stews, soups or baked beans.

  • 5 slices (or the equivalent) bread of any kind. Sourdough is nice
  • 3 egss
  • ¼ c grated parmesan and/or cheddar cheese
  • 1¼ c milk or mix of milk and cream
  • ½ t pepper
  • ½ t salt
  • 1 T melted butter to grease the pan
  • ½ c finely minced fresh herbs of your choice (optional

Place bread in greased 9 X 9 pan. Whisk all other ingredients together and pour over bread. Allow to sit at least 30 minutes or several hours in the fridge.

Toppings:

  • ½ c grated parmesan cheese
  • 1 T melted butter
  • ½ c cherry tomatoes
  • ¼ c sliced chives or green onions

Just before baking top with more grated cheese and melted butter.

Bake for 35 - 40 minutes until set. Serve hot topped with halved cherry tomatoes and sliced chives or green onions.
