Bueberry Oat Muffins

  • 1 c rolled oats
  • 1 c buttermilk or yogurt
  • ½ t salt
  • ½ c brown sugar
  • 1 c flour
  • 1 t baking powder
  • ½ t baking soda
  • 1 egg, beaten
  • ¼ c softened butter
  • 1 c blueberries (if using frozen berries, coat the berries with a bit of flour prior to adding to the batter)

Combine oats and buttermilk in small bowl. Let stand.

Combine flour, baking powder, baking soda, salt and brown sugar in mixing bowl. Stir well to blend.

Add egg and melted butter to oat mixture.

Add oat mixture to dry ingredients.Stir until just moistened.

Gently fold in blueberries.

Fill greased muffin cups.

Bake at 350 degrees for 18 - 20 minutes.

Note: This is a sugar reduced recipe lending to a subtly sweet muffin. If you want a more traditionally sweet muffin increase the sugar to 1/2 cup.
