Chocolate Muffins

  • 2 T cocoa powder
  • 1 c whole wheat flour
  • ½ c white flour
  • 2 T other flour if desired, such as oat, almond, rice …
  • 2 T sugar
  • 2 t baking powder
  • ½ t salt
  • 1 c milk or 1/2 c plain unsweeetened yogurt and 1/2 cup milk
  • 1 egg
  • 2 T unsalted butter, melted
  • 1 t vanilla
  • ½ c dried cranberries
  • ½ c chocolate or carob chips

Mix dry ingredients. Add liquids. Stir to blend. Add cranberries and chocolate chips.

Pour batter into well oiled muffin tins. Bake at 350 degrees for 18 to 20 minutes.
