Poppy Seed & Banana Muffins

  • ½ c milk
  • 1¼ c whole wheat flour
  • 2 lemon juice
  • 1 c bran
  • ⅓ c poppy seeds
  • ½ c wheat germ
  • ¼ c oil
  • 1 t soda
  • ¼ c honey
  • 1 t baking powder
  • 2 eggs
  • ½ t salt
  • 2 medium bananas

    Preheat oven to 350 degrees. Combine milk, lemon juice and poppy seeds and set aside. Beat together oil, honey and eggs. Stir in mashed bananas. Combine with poppy seed mixture. Stir dry ingredients together in a large bowl. Pour in liquid mixture. Stir until just blended.

    Bake 20 - 25 minutes at 350 degrees.
