Poppy Seed and Banana Muffins

  • ½ c milk or unsweetened plain yogurt
  • 1¼ c whole wheat flour
  • 2 t lemon juice
  • ⅓ c poppy seeds
  • ½ c wheat germ
  • ¼ c vegetable oil
  • 1 t baking soda
  • ¼ c honey
  • 1 t baking powder
  • 2 eggs
  • ½ t salt

    Preheat oven to 350. Combine milk, lemon juice and poppy seeds; set aside. Beat together oil, honey and eggs. Stir in mashed bananas.  Combine with poppy seed mixture. Stir dry ingredients togeher in a large bowl. Make a well in the centre and pour in liquid mixture. Stir until ingredients are just blended.

    Spoon batter into oiled muffin tins. Bake for 18-20 minutes until toothpick comes out clean.
