Oatmeal Cake

This recipe can be made with either two cups leftover porridge or, pour 1¼ c boiling water over 1 c rolled oats and let stand for five minutes.

Cream:

  • ½ c butter
  • ½ brown sugar

    Add:

    • 2 eggs, one at a time and continue to cream.

Add oats/porridge and mix.

Add dry mixture:

  • 1 c flour
  • 1 t soda
  • 1 t salt
  • 1 t cinamon
  • ½ t cloves
  • 1 t cream of tarte
  • 1 c chopped dates
  • ½ c chopped walnuts

    Mix and pour into greased 12 X 8 pan.

    Bake at 350 degrees for 40 - 45 min.
