These healthy cookies are a great tasting gluten free treat.
Preheat the oven to 350 degrees Fahrenheit.
Toast the coconut in a small dry skillet (no oil) over medium heat until lightly browned.
Add the dates, egg, yogurt, nut butter, butter, and vanilla to a blender or food processor and blend until smooth.
Place the coconut, oats, almond flour, baking soda, and cinnamon into a large mixing bowl. Combine, then add the ingredients from the blender. Add the chocolate chips and stir together.
Drop onto lightly oiled cookie sheet and bake 12 - 15 minutes until golden brown.
