Pumpkin Cheesecake

Tastes as good as it looks.

Crust:

  • ¼ cup butter
  • 1¼ c ginger snaps, crushed (can be found where graham crackers and vanilla wafers are)

Mix together crust ingredients and press into pie pan. Bake crust at 350 for about 8 minutes.

Filling:

  • 250 gm cream cheese
  • 1 c plain greek yogurt
  • ½ c suger
  • 2 eggs
  • 1¾ c cooked mashed pumpkin
  • ½ t cinamon
  • ½ t nutmeg
  • ½ t ginger
  • ½ t salt

Put all ingredients into blender. Blend well.Pour into crust and bake at 350 for about 1 hour or until knife comes out clean. Chill.

Garnish with whipped cream and chocolate curls.
