Sparkling Berry Pie

Fast, easy and delicious.

  • 45 vanilla wafers, crushed
  • ¼ c sugar
  • 1½ T brown sugar
  • 1½ T lemon juice
  • ¼ c melted butter
  • 4 c halved strawberries or whole raspberries
  • honey to taste (about ¼ c)
  • 1 pkg plain gelatin
  • 1 c cold water

Combine crumbs, brown sugar and melted butter. Press into pie plate and chill. Pour water into medium saucepan. Sprinkle gelatin into water and let stand 5 minutes. Stir in honey and lemon juice. Bring to a boil over medium-high heat, stirring once. Pour over berries and stir gently. Chill until slightly set. Spoon into prepared pie shell and chill until firm. Garnish with whipped cream or icecream.
