Orange Pancakes

This is another annual favorite served up on Christmas morning.

Pancakes

  • 2 cup whole wheat flour
  • 1 T baking powder
  • 1 t salt
  • 2 egg, beaten
  • 2 T honey, melted
  • 1 c plain yogurt
  • ½ c milk
  • ½ orange juice
  • 3 T oil or melted butter
  • 1 t grated orange rind

Mix dry ingredients. Add all other. Stir until just mixed.

Make about 8 large pancakes. Set aside, covering with a towel.

Filling

  • 1½ cups ricotta cheese
  • thin slices of peeled orange or mandarin orange segments

Orange Sauce

  • 2 T cornstarch
  • ¼ t salt
  • 2 T orange rind
  • 2 c orange juice
  • ¼ c honey
  • 1 T butter
  • 1 fresh orange, diced

Mix all ingredients together except for the butter and orange. Bring to a boil stirring constantly until thickened. Reduce heat to jusk keep warm and add the butter and orange pieces.

Assembly

On a large platter, place one pancake. Top with ricotta cheese, orange slices and a small quantity of orange sauce. Repeat until pancakes are all used.

Top stack with remaining orange sauce allowing sauce to cover the top and run down the sides. Top with additional orange slices and dollops of whipped cream if desired.
