Spare Ribs with Fig Glaze

serves 4

Easy recipe to put together, but allow several hours for baking.

Ribs: 750 gm side ribs

Rub:

  • 3 cloves garlic
  • ¾ t pepper
  • ½ t salt
  • ½ t crushed fennel seeds
  • ½ t sage
  • ½ t thyme

Blend all together and rub over surfaces of ribs. Place into baking dish and cover with foil. Bake at 300 degrees for 2 hours or more.

Meanwhile prepare glaze.

Glaze:

  • 1/3 cup chicken stock, preferably homemade
  • 1 T honey
  • ½ t balsamic vinegar
  • 2 dashes cumin
  • ¼ teaspoon salt
  • dash white pepper
  • dash cinnamon
  • ½ orange, peeled with pith removed
  • 5 dried figs, chopped
  • 2 T water
  • ½ T olive oil

Pulse all in blender. When ribs are cooked, spread a layer of glaze over the top side of the ribs. Return ribs to the oven without a cover, or barbecue on medium heat for another twenty minutes. Flip rack of ribs and apply another generous coat of glaze. Return to oven or grill for another 20 minutes. Repeat the process again, if necessary until the ribs are saturated with glaze and browned.
