- 4 T olive oil
- 3 chicken breasts cut into strips
- 1 red onion coarsely chopped
- ½ red pepper, cut into thin strips
- 1 garlic clove, minced
- 1 small head broccoli, cut into bite sized pieces
- 2 t chili powder
- 1 T worcestershire sauce
- 2 T chopped cilantro
- ½ to 1 T Louisiana hot sauce
- 1 c grated mozzarella or cheddar cheese
- salt and pepper to taste
Under broiler, brown chicken and veggies. Add spices and combine until evenly coated. Sprinkle with cheese and return to broiler until cheese melts and is lightly brown.
Serve immediately spooned over Cheese and Jalapeno Corn Flap Jacks.
Cheese & Jalapeno Corn Flap Jacks
- 1⅓ c corn meal
- 2 c buttermilk (or 2/3 c plain yogurt and 1 1/3 c milk)
- 1¼ t salt
- 1 jalapeno pepper seeded and chopped (optional)
- ½ t baking soda
- ½ c grated cheddar
- ¼ c flour
- 2 eggs
- ¼ c melted butter
Mix dry ingredients in a bowl. Beat eggs and liquids in another bowl. Add cheese and jalapeno. Stir liquid ingredients into dry only until combined.
Fry on hot griddle.
