Festive Broccoli Salad

A great salad summer or winter, but especially in the winter when a hearty salad is in order that doesn’t require a large variety of fresh vegies and herbs.

  • 1 c mayonnaise
  • ¼ c red wine vinegar
  • 1 T sugar
  • ½ t pepper
  • ¼ t salt
  • 1 kg broccoli
  • 2 cups shredded cheddar cheese
  • 1 c dried cranberries or raisons
  • 1 cup slivered dried apricots
  • 1 c slivered almonds, toasted
  • 1 c finely chopped red onion
  • 1 can mandarin oranges, drained
  • 4 slices bacon, cooked and crumbled

Dressing:  Whisk together mayonnaise, vinegar, sugar, pepper and salt until blended.  Set aside. 

Salad: Finely chop broccoli, stems and florets.  Combine broccoli and remaining ingredients (cheese through bacon) in a bowl.  Add dressing and toss to combine.  Cover and refrigerate for at least 2 hours or up to 24 hours.  Serves 12.
