A summertime meal in a bowl!
- ½ head romaine lettuce
- ½ head bib or Boston lettuce
- ½ bunch watercress or chopped parsley
- ½ small red onion, thinly sliced
- 2 tomatoes, coarsely chopped
- 1 avocado, diced
- 14 oz can baby whole corn
- 2 cooked chicken breasts, diced
- 6 - 8 slices of crisp cooked bacon, crumbled
- 2 hard cooked eggs, chopped
- 1 c diced aged cheddar cheese
- ½ to ¾ c ranch or Caesar dressing
Toss all ingredients together. Enjoy!
