Hearty Tuna Casserole

  • 2 250 g cans tuna or salmon
  • 1/2 c mayonaisse
  • 3 c uncooked noodles
  • ½ t thyme
  • ½ c chopped celery
  • ¼ t salt
  • ⅓ thinly sliced green onions
  • 1 c shredded monterey jack or other cheese
  • ½ to ⅔ c sour cream
  • 1 chopped tomato
  • 2 t prepared mustard (dijon is nice)
  • 1 small zucchini, sliced

Cook noodles to el dente consistency. Combine with all other ingredients except zucchini, tomatoes and cheese.

Place in casserole dish.

Top with zucchini then cheese.

Bake at 350 for 30 minutes

Garnish with diced tomatoes.
