Another great way to serve spaghetti squash.
Slice squash in half, remove seeds. Brush with olive oil and bake at 350F for 45 minutes to 1 hour until tender. Meanwhile, combine all ingredients except cheese in large skillet. Cook until mushrooms are just tender. Using fork, remove squash from shell and add to mushroom mixture. Toss well. Place in serving dish and sprinkle with Parmesan cheese.
