Fig and Blue Cheese Crostini

These tny crostini will tantalize you for the meal ahead.

  • 4 dried figs
  • salt and freshly ground pepper
  • 1 T balsamic vinegar
  • 2 T olive oil
  • 12 slices of french baguette
  • 2 T crumbled with your choice of blue cheese or soft unripened goat cheese

Trim tough stem from figs. Slice each fig lengthwise into 3 slices and place in a shallow dish. Drizzle with oil and vinegar and season with salt and pepper. Let stand for at least 5 minutes or for up to 1 day to allow the figs to absorb the liquid and seasoning. Just before serving, preheat broiler. Place baguette slices on a baking sheet. Top each slice with a slice of fig, reserving oil and vinegar. Sprinkle each fig with cheese. Broil for 1 to 2 imutes or until cheese is melted. Serve drizzled with reserved oil and vinegar.
